Common Dishes

Egg Drop Soup: a chicken broth soup with ribbons of egg cooked in the soup.
Fried Rice: rice mixed with a soy sauce, vegetables, meat and/or eggs. stir fried in a wok.
Fried Wontons: wonton noodles stuffed with vegetables and/or meat and deep fried.
Spring Roll: thin, crispy, deep fried vegetables rolls. (also can have meat) they are also the traditional version of an egg roll.
Wonton Soup: beef or chicken broth soup served with meat or vegetable stuffed wonton dumplings.

Example of a Typical Meal

The Peking duck is a dish made up with roast duck and strips of cripsy duck skin wrapped in thin pancakes. This is the best known dish in northern China. Tea is the one beverage Chinese people drink at most of their meals. The most types of tea is green, black, and oolong. (these drinks are commonly drunk plain, without milk or sugar added.

Flavor Principles

Some flavor principles that China uses are soy sauce, ginger, and rice wine. They also have been boiling, dipping, stewing and munching on herbs for thousands of years. They use certain herbs to guide the medicine work. Some Chinese herbs are combined to reduce toxicity of other drugs. Most herbs are only used to enhance flavor. The Chinese believe that flavor eis very important because it helps to send nutrition to the organs.

Common Cooking Methods

China's most common methods are stir-frying, deep-frying, shallow-frying, braising, boiling, steaming and roasting.
  • Stir-Frying: This is the most frequently used cooking method. This methods cooks processed ingredients at high heat for a short period of time.
  • Deep-Frying: The common method of preparing these dishes is to cut the ingredients into medium-sized pieces, soak them in prepared seasoning for a while, coat with cornstarch, and fry in hot deep oil over medium heat.
  • Shallow-Frying: These dishes are usually tender inside, appearing golden or slightly burnt outside. The ingredients for shallow-frying are usually cut into slices or flat pieces and rubbed with seasonings.
  • Braising: This method requires to add ingredients and seasonings in a wok or a saucepan at the same time, add in some water, boil and then simmer for one hour or more. The ingredients are usually cut into cubes or diamonds.
  • Boiling: This method could be considered the simplest among all cooking methods. It simply involves placing food in boiling water. It is mainly used for cooking small-sized and soft ingredients, especially for most of the vegetable soups like Tomato & Egg Soup and aslo Tofu Soup.
  • Steaming: This method involves placing the ingredients in a steamer basket which is placed over water in a steamer pot. The steamed foods contain more nutrition than that of boiled. It is mainly used for steaming buns and dumplings.
  • Roasting: This method is to cook the food over the open flame of charcoal or in an oven. Many ingredients can be roasted, including all kinds of meat as well as vegetables.

China is located in Southeast Asia near the coastline of the Pacific Ocean, and it is also the world's third largest country. China has an area of 9.6 million square kilometers and a coastline of 18,000 kilometers which gives it a shape on the map like a rooster. Chain's climate varies from being bitter cold in the winter to unbearable heat in the summer.
